Hi, y’all! This book is my proudest achievement so far, and I just have to tell y’all why I am so excited about it. It’s a book of classic dishes, dedicated to a whole new generation of cooks—for every bride, graduate, and anyone who has a love of a great Southern meal. My family is growing and expanding all the time. We’re blessed with marriages and grandbabies, and so sharing these recipes for honest, down-home dishes feels like passing a generation’s worth of stovetop secrets on to my family, and yours. I’ve been cooking and eating Southern food my whole life, and I can tell you that every meal you make from this book will be a mouthful of our one-of-a-kind spirit and traditions. These recipes showcase the diversity and ingenuity of Southern cuisine, from Cajun to Low-Country and beyond, highlighting the deep cultural richness of our gumbos and collards, our barbecues and pies. You may remember a few beloved classics from The Lady & Sons, but nearly all of these recipes are brand-new—and I think you’ll find that they are all mouthwateringly delicious. It is, without a doubt, a true Southern cooking bible. I sincerely hope that this book will take its place in your kitchen for many years to come, as I know it will in mine. Here’s to happy cooking—and the best part, happy eating, y’all! Best dishes, Paula Deen

Anyone not adequately acquainted with the South’s true culinary terrain might struggle with the idea of a Southern vegetarian. Because isn’t the South one big feast of meaty indulgence? Don’t vegetables play a supporting role to fried chicken and bacon on a Southern table? Justin Fox Burks and Amy Lawrence turn that notion on its head by recasting garden bounty as the headlining act on a plate. In a region distinguished by ideal growing conditions and generations of skilled farmers, Southern-style vegetarian cooking is not only possible, it’s a pursuit brimming with vine-ripened possibility. Grab a chair in Burks and Lawrence’s kitchen and discover modern recipes that evoke the flavors of traditional Southern cooking, with techniques and ingredients loved so dearly throughout the region: Lemon Zest and Thyme Pimento Cheese Grilled Watermelon and Tomato Salad with Honey Lime Vinaigrette Okra Fritters with Creole Mustard Sauce Vegetarian Red Beans and Rice with Andouille Eggplant Roast Beet Salad with Sea Salt Granola and Honey Tarragon Dressing Grilled Peach Ice Cream Whether you’re a devoted plant-eater or a steadfast omnivore, The Southern Vegetarian Cookbook will help you shift vegetables from the outskirts of your plate into main course position. Eating your vegetables has never been more delicious. "True Southern food will always adapt to its surroundings. It is not the stubborn lout that many think it is, rather it’s a nimble cheerleader of its region. It revels in vegetables and cherishes seasons. Burks and Lawrence are adding healthy substance to the definition of our Southern food. The Southern Vegetarian is a great addition to any culinary library." —Hugh Acheson, author of A New Turn in the South "Come eat with The Chubby Vegetarian. Justin and Amy are the only people I have ever met who can take the hock out of greens and not remove the soul from the pot." —Kelly English, Food & Wine Best New Chef 2009, Chef/Owner of Restaurant Iris “What you have in your hands is a gift. It is a fresh, fun, slightly irreverent and joyful new look at Southern vegetarian dishes...a look that needed to be taken.” —John Currence, James Beard Foundation award for Best Chef South, Chef/Owner, City Grocery Restaurant Group

The beloved owner of the wildly popular Sweetie Pie's restaurant, and star of the OWN reality television show Welcome to Sweetie Pie's shares recipes for her renowned soul food and the lessons she's learned on the path to success. Growing up in Mississippi and St. Louis, Robbie Montgomery, the oldest of nine children, was often responsible for putting meals on the family table. Working side by side with her mother in their St. Louis kitchen, Robbie learned to prepare dozens of classic soul food dishes. Now, at seventy-two, Miss Robbie passes down those traditions for generations of fans to enjoy in Sweetie Pie's Cookbook. Robbie takes you into the kitchen to prepare her most favored meals—smothered pork chops, salmon croquettes, baked chicken—and tells you heartfelt and humorous stories, including amazing tales from her life at the restaurant and on the road as a back-up singer. Miss Robbie began her culinary career on the road—in the segregated America of the1960s, finding welcoming restaurants in small cities and towns was often challenging for African-Americans. When a collapsed lung prematurely ended her singing career, Miss Robbie returned to St. Louis, using her formidable cooking talent to open a soul food restaurant that would make her legend. Through her show and this special cookbook, Miss Robbie hopes to maintain the place of soul food cooking—its recipes, history, and legacy—in American culture for decades to come. Sweetie Pie's Cookbook includes 75-100 gorgeous color photos and an Index.

This book has been on and off the radar for several years but I didn’t start researching, testing and writing recipes until 2011. But the book took a while because I wanted it to be more than just another “southern cook book”. I wanted it to reflect my family’s history while paying all due respect to the major influences in my cooking and the recipes shared within the book. I tried to approach the book from an instructor’s perspective. By this I mean I did not want to assume that everyone who will acquire the book will be a skilled cook or chef searching for new or old lost recipes. But, it’s also for the first time cook who really wants to learn and then perfect the same recipes that have been served for generations. My philosophy is that if you can read today, you can cook today. And in time, you too can become a great cook. This cook book touches on some of the historical elements of southern cooking. It also covers some of the various substitutions that we can and should use in the dishes when a more sensible option is needed with less fat, sodium and calories. In the past, calorie counting had never been a huge concern when cooking southern food. Generations ago our grandparents and great grandparents had physically demanding days which burned large sums of calories and thus could afford the calorie rich meals lovingly prepared for the family. Over the years our work day has gone from the farm to the fields and on to the corporate office. Lifestyle changes like this have caused us to take a more active interest in what we eat and how it’s prepared. So, creating dishes with the old familiar tastes that are good to us but have fewer calories and are good for us. The plain and simple truth is that every holiday has always had a signature menu item that was rooted in tradition and purpose. On New Year’s there were black eyed peas and cabbage, on Easter there was a baked ham, on Memorial Day there was a smoked pork shoulder (butt), on 4th of July we enjoyed barbecue ribs, and on Labor Day there was an incredible brisket. The winter holidays always seemed to take things to another level of care. Thanksgiving always marked the beginning of some special times. I could always count on those times to be filled with lots of love, family and food like home made yeast rolls. And Christmas just wasn’t Christmas without my mom’s Red Velvet cake and Aunt Jean’s Christmas candies. And throughout the year there were countless Sunday dinners where we experienced that special love and care. It never really occurred to me that everyone didn’t have these kinds of skilled cooks and wonderful foods growing up. It wasn’t until I got much older that I came to understand that being around the incredible food (love) of my childhood was truly special and a blessing. What Is Verglo? I’ve been asked many times what “Verglo” means. Basically it’s the names of the two people that influenced my passion for cooking. My mom, (Vernell) and my aunt, (Gloria) or “Aunt Jean”, VER-GLO or Verglo!
